After a hard day’s work, you might just want to go home and put your feet up.
Cooking and doing a Fiit class may be far from your mind and we don’t blame you. It’s normal.
But the day’s not over yet! The end of work could be the start of some quality me-time. An hour (or 25 minutes) a day where you focus on your needs and drown out the rest.
So picture yourself — you get in. You throw on your workout gear. You put on a short class. You sweat it out, power through and end on a real high.
You’ve worked up an appetite. So, you get into your kitchen. You follow this simple (and delicious!) recipe and you eat like a king. You then unwind, feeling like a boss.

Grilled aubergine tabbouleh
(Serves 2) (20 mins prep)
Ingredients:
2 tbsp garlic-infused oil
1 large aubergine diced
1 cup couscous
½ cucumber diced
1 cup cherry tomatoes, halved
Small pack mint, roughly chopped
Small pack parsley, roughly chopped
For the dressing:
Juice 1 lemon
5 tbsp coconut yogurt
2 tbsp tahini
1 tbsp maple syrup
Method
1. Heat the oil in a frying pan over a medium-high heat and add the aubergine. Cook for 10 mins until soft and cooked through.
2. Place the couscous in a large bowl and add 240ml boiling water. Cover with cling film and leave to stand for 5-6 mins.
3. Combine all the ingredients for the dressing and season to taste.
4. When the couscous has absorbed all the water, fluff it up with a fork. Season and stir in the cucumber, tomatoes and herbs. Add half the dressing and toss to coat. Scatter over the aubergine and drizzle the rest of the dressing.
